Turkey Cranberry Salad with Walnuts and Feta recipe

This is a yummy salad with turkey, sweet cranberries, crunchy walnuts, and creamy feta cheese. It's all mixed with fresh greens and a tasty dressing. It's good for lunch or dinner and makes you feel full and happy!

Ingredients

1/3 cup walnuts, chopped
1 large avocado
1/3 cup raspberry vinaigrette
1/3 cup dried cranberries
1 English cucumber
4 oz feta cheese, crumbled
1 pint cherry tomatoes
12 oz smoked turkey breast, sliced
5 oz shredded purple cabbage
5 oz baby spinach
1 orange bell pepper

Method

Wash and dry all the fresh produce.

Place baby spinach and shredded purple cabbage in a large salad bowl.

Trim and halve the cucumber lengthwise, then cut into thin half-moons. Add to the salad bowl.

Halve the cherry tomatoes and add them to the bowl.

Trim, seed, and dice the orange bell pepper. Toss it into the bowl.

Halve and pit the avocado; scoop out the flesh and dice it. Add to the salad.

Cut the smoked turkey breast into bite-sized pieces and add to the salad.

Add the crumbled feta cheese, chopped walnuts, dried cranberries, and raspberry vinaigrette to the bowl.

Gently toss the salad to mix all the ingredients together.

Serve the salad onto plates or into bowls and enjoy right away!
