Tropical Chicken Fried Rice with Bell Pepper, Peas & Mint recipe

This is a yummy rice dish with chicken, pineapple, and veggies. It has peas, bell pepper, and mint for a fresh taste. It's cooked in a pan and is good for dinner.

Ingredients

1 1/2 cups basmati rice
1 large bell pepper, diced
1 cup frozen peas
1/2 small bunch mint leaves, chopped
3 tablespoons olive oil
2 large chicken breasts, cut into bite-sized pieces
1/2 teaspoon black pepper
1 teaspoon salt
2 tablespoons soy sauce
1 tablespoon honey
1 medium pineapple, cored and diced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced

Method

Rinse the basmati rice under cold water, then cook according to package instructions.

While the rice is cooking, heat 2 tablespoons of olive oil in a large pan over medium-high heat.

Season the chicken pieces with salt and pepper, then add to the pan and cook until browned and cooked through, about 5-6 minutes. Remove chicken and set aside.

In the same pan, add the remaining tablespoon of olive oil, diced bell pepper, minced garlic, and ginger. Cook for 2-3 minutes until the bell pepper starts to soften.

Add the diced pineapple and frozen peas to the pan, and cook for another 3-4 minutes until the peas are heated through.

Stir in the cooked rice, cooked chicken, soy sauce, and honey. Cook for 2-3 minutes, stirring constantly, until everything is heated through and well combined.

Remove from heat and stir in the chopped mint leaves.

Serve the tropical chicken fried rice hot, garnished with additional mint if desired.
