Tater Tot Breakfast Casserole is a delicious and hearty breakfast recipe that is loaded with eggs, tater tots, cheese, and diced green chilies for some spice.

Ingredients

30 ounce bag frozen tater tots
1 pound breakfast sausage
1 medium onion, (diced)
12 ounce bacon, (crispy)
4 ounce can diced green chilies
1 teaspoon Slap Ya Mama seasoning
1 teaspoon garlic powder
1 teaspoon black pepper
⅓ cup all purpose flour
1 cup heavy cream
⅔ cup vegetable broth
2 cups sharp cheddar cheese, (shredded)
8 large eggs whisked with ⅛ cup milk

Method

Preheat the oven to 375 degrees and lightly spray a 9x13 baking dish with non-stick cooking spray. Set aside.

In a large skillet or frying pan, cook sausage and onions together until sausage is no longer pink and onions are translucent. Drain grease and return to the pan.

Add diced green chilies, garlic powder, pepper and Slap Ya Mama seasoning. Stir.

Sprinkle flour over sausage mixture and cook for 2 additional minutes.

Slowly pour heavy cream and vegetable broth into the pan, stir until combined, and cook until heated through.

Pour sausage mixture into prepared baking dish and spread out in an even layer.

Sprinkle 1 ½ cup of cheese on top, followed by tater tots, egg mixture, and the remaining ½ cup of cheese.

Bake uncovered for 40-45 minutes or until hot and bubbly.

While the breakfast casserole is baking, cook bacon until crispy. Once bacon is cool enough to handle, crumble and add to the top of the breakfast casserole once removed from the oven. Top with sliced green onions and sour cream, if desired.
