Tater Tot Breakfast Casserole recipe

Tater Tot Breakfast Casserole is a hearty casserole recipe loaded with pork sausage meat, diced onion, chopped ham, crumbled bacon, eggs, shredded cheese and topped with tater tots.

Ingredients

1 lb pork sausage meat
1 cup diced yellow onion
4 oz chopped deli sliced honey ham
3/4 cup real bacon bits
2 cups shredded mozzarella and cheddar cheese blend
6 eggs, large
1/4 cup heavy cream
1 tsp salt
1 tsp pepper
1 tbsp garlic powder
1 tbsp onion powder
28 oz frozen tater tots

Method

Preheat oven to 425F.

Dump sausage meat into a large saute pan over medium-high heat.

Crumble the sausage meat well as it cooks.

Add the diced onions to the pan with the sausage meat while it's cooking. Stir well.

Once the sausage meat is fully cooked, add the chopped ham and 1/2 cup of the bacon bits to the pan. Stir well.

Dump the meat mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

Sprinkle 1 cup of the shredded cheese on top of the meat.

Crack the eggs into a medium mixing bowl and beat well.

Add the heavy cream, salt, pepper, garlic powder and onion powder to the bowl. Whisk well.

Pour the egg mixture over the meat in the baking dish.

Place the tater tots in a single layer on top of the casserole.

Place the casserole in the oven and bake for 30 minutes.

After 30 minutes remove the casserole from the oven and sprinkle the remaining cup of shredded cheese on top of the tater tots, followed by the remaining 1/4 cup of real bacon bits.

Return the casserole to the oven and continue baking until the cheese on top is completely melted. 4-6 minutes.

Remove the casserole from the oven and leave it to sit for a couple minutes before slicing and serving.
