Spinach, Cherry Tomato & Goat Cheese Frittata recipe

This is a yummy egg dish with spinach, cherry tomatoes, and goat cheese. It's like a big, tasty omelet with veggies and cheese inside. You cook it in the oven and can share it with your family for breakfast or lunch!

Ingredients

2 cups of spinach
200 g cherry tomatoes
2 garlic cloves
10 eggs
120 g goat cheese
1 small bunch of basil
1 small red onion
3 tbsp olive oil
Salt
Pepper

Method

Preheat the oven to 180C (350F).

Wash the spinach and cherry tomatoes. Cut the tomatoes in halves.

Peel and finely chop the garlic. Peel and thinly slice the red onion.

In a bowl, crack the eggs and whisk them with a pinch of salt and pepper.

Tear the basil leaves and add them to the eggs, reserving a few for garnish.

In an oven-safe frying pan, heat 2 tablespoons of olive oil over medium heat. Add the red onion and cook until soft, about 3 minutes.

Add the garlic and spinach to the pan, cooking until the spinach wilts, about 2 minutes.

Pour the whisked eggs over the spinach and onions, making sure the mixture spreads evenly.

Arrange the cherry tomato halves on top of the egg mixture and crumble the goat cheese over everything.

Bake in the oven for 20 minutes, or until the eggs are set and the top is slightly golden.

Remove from the oven, let it cool for a few minutes, then slice and serve garnished with the reserved basil leaves.
