Spinach, Cherry Tomato & Goat Cheese Frittata Recipe

This is a yummy egg dish with green spinach, red cherry tomatoes, and creamy goat cheese. It's cooked in a pan and then in the oven. It's good for breakfast or any meal. You can share it with 4 people.

Ingredients

1 tablespoon extra virgin olive oil
1 small bunch spinach, roughly chopped (about 2 cups)
10 cherry tomatoes, halved
6 large eggs
1/4 cup milk
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
4 ounces goat cheese, crumbled

Method

Preheat the oven to broil.

In a medium bowl, whisk together the eggs, milk, basil, salt, and pepper. Set aside.

Heat the olive oil in an oven-safe skillet over medium heat.

Add the spinach and cook until it wilts, about 1-2 minutes.

Scatter the cherry tomatoes over the spinach.

Pour the egg mixture into the skillet over the spinach and tomatoes.

Cook without stirring for about 5 minutes, until the edges start to set.

Sprinkle the crumbled goat cheese evenly over the top.

Place the skillet in the oven and broil until the top is set and slightly golden, about 3-5 minutes.

Remove from the oven, let it cool for a couple of minutes, then cut into wedges and serve.
