These egg muffins are like little bites of breakfast heaven. They have eggs, cheese, and veggies. You cook them in a muffin tin and can eat them with your hands. They're good for breakfast or a snack.

Ingredients

12 eggs
1 cup fresh spinach, chopped
1 cup cherry tomatoes, halved
4 oz goat cheese, crumbled
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon olive oil

Method

Preheat your oven to 400°F (205°C) and position a rack near the bottom.

Use olive oil to grease 12 muffin cups.

Wash the spinach and cherry tomatoes. Dry them well.

Chop the spinach and cut the cherry tomatoes in half. Place them evenly into the muffin cups.

Crack the eggs into a medium bowl. Add salt and pepper, then whisk them together.

Pour the egg mixture over the spinach and tomatoes in each muffin cup.

Crumble the goat cheese and sprinkle it on top of the egg mixture.

Bake for 15-18 minutes, or until the eggs are set in the center.

Take the muffins out of the oven and let them cool for a minute.

Use a spatula to gently remove each egg muffin.

Serve them warm, or let them cool and take them with you for a tasty breakfast on the go.
