Spiced Beef with Cumin Roasted Vegetables & Feta recipe

This is a yummy dish with beef and roasted veggies. The beef is cooked with spices. The veggies are cooked with cumin and honey. Then, you put feta cheese and almonds on top. It's a warm and tasty meal!

Ingredients

4 medium carrots
1/2 small package fresh cilantro
4 ounces feta cheese
4 medium parsnips
1/2 cup almonds, sliced
1 1/2 pounds ribeye steak
1/4 teaspoon black pepper
2 tablespoons olive oil
1 teaspoon cumin, ground
1 teaspoon coriander, ground
2 tablespoons honey
1/2 teaspoon salt

Method

Preheat your oven to 450°F (230°C).

Clean and dry all the fresh veggies and herbs.

Chop cilantro roughly and crumble the feta cheese into a bowl; set aside.

Peel and cut the carrots and parsnips into 1/4-inch thick rounds. Put them on a baking sheet.

Season the veggies with cumin, salt, and drizzle with honey. Toss to coat evenly.

Drizzle olive oil over the veggies and roast in the oven until they are soft, about 25 minutes.

While veggies are roasting, heat a pan over medium-high heat.

Dry the steak with paper towels and season with coriander, black pepper, and a pinch of salt.

Cook the steak in the hot pan with some olive oil until it's how you like it, about 2-5 minutes on each side.

Let the steak rest for 5 minutes after cooking, then cut it into thin slices.

Take the veggies out of the oven and let them cool a bit.

Put the steak and veggies on plates. Sprinkle with cilantro, feta cheese, and sliced almonds.
