The best shrimp tacos with a sweet mango salsa that is ready in 20 minutes. Healthy, light, and so delicious. This will be a huge hit!
Ingredients
1 lb raw shrimp, peeled and deveined
1.5 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 teaspoon salt
1/4 tsp oregano
2 limes, juice (divided)
2 tsp olive oil
2 mangos, diced
1 cup canned black beans, drained and rinsed
1/4 cup red onions, diced
1/4 cup cilantro, diced
1 jalapeno, minced (seeds removed for less spice)
Salt to taste
8 corn tortillas
Method

Toss the shrimp with chili powder, cumin, garlic powder, onion powder, salt, oregano, and half the lime juice. Let the shrimp marinate for 10-15 minutes.

Make the mango salsa. Combine the mango, black beans, red onions, cilantro, jalapeno, remaining lime juice, and salt. Taste and season as needed.

Heat up the tortillas and wrap in foil so they stay warm. Prepare any other toppings you will be using.

Heat a skillet over high heat. Add the olive oil. Once hot, add the shrimp in a single layer and cook for about 2 minutes per side until cooked through.

Assemble the tacos with the mango black bean salsa and cooked shrimp. Top with extra lime juice and cilantro if desired.
