Ingredients

Ridge gourd (small, cut to 1 inch piece) 1
Prawns 200 g
Grated coconut 1 cup
Garlic Pods 2
Turmeric powder 1/2 tsp (divided)
Red Chili Powder 1 Tsp
Tomato (chopped) 1
Green chilies (cut lengthwise) 2
Coconut oil 2 tbsp
Mustard seeds 1 tsp
Red chili whole 2
Curry leaves 2 sprigs
Water 2 cups (approximately )
Salt as required

Method

Wash and clean the prawns and de-vein them.

Now cook the ridge gourd with 1/4 tsp turmeric powder and little salt in about 1 and 1/2 cups of water.

Once they are partially cooked, add in the cleaned prawns and cook them both together, until fully cooked.

Mean while grind together the grated coconut, garlic and 1/4 tsp turmeric powder into a smooth paste.

Add this coconut paste to the cooked ridge gourd and prawns.

Then add the chopped tomatoes and green chilies.

Add the red chili powder and check salt level, and add more if required.

Adjust the consistency by adding more water, if the curry is too thick.

Allow to boil for 4-5 minutes.

Switch the flame off.

In another pan, heat the coconut oil or any vegetable oil.

Splutter mustard seeds.

Add curry leaves and red chili whole.

Switch the flame off.

Add this to the prepared curry.

Serve hot with steamed rice or roti.
