Penne Pasta with Spinach Tomato Cream Sauce recipe


This is a yummy pasta dish with a creamy tomato sauce, spinach, and cheese. You cook pasta and mix it with sauce made from tomatoes, cream, and cheese. It's easy to make and very tasty!


12 oz penne pasta
1 tbsp extra virgin olive oil
1 large yellow onion, diced
3 cloves garlic, minced
8 oz cremini mushrooms, sliced
1/2 tsp crushed red pepper
1/2 tsp Italian seasoning
1/2 tsp salt
1 (28 oz) can crushed tomatoes
1 cup heavy cream
5 oz fresh spinach
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup fresh basil leaves, chopped


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the penne pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3 minutes.
Add the sliced mushrooms to the skillet and cook until they are soft, about 5 minutes. Season with crushed red pepper, Italian seasoning, and salt.
Pour the crushed tomatoes into the skillet with the onions and mushrooms. Stir and cook for 5 minutes, allowing the flavors to meld.
Lower the heat and stir in the heavy cream until well combined. Add the fresh spinach and cook until it wilts, about 2 minutes.
Mix in the shredded mozzarella and grated Parmesan cheese until the cheese melts into the sauce.
Add the cooked penne pasta to the skillet and toss everything together until the pasta is evenly coated with the sauce.
Serve the pasta hot, garnished with chopped fresh basil.
