Mozzarella, Arugula & Zucchini Salad recipe

This is a fresh salad with zucchini, spicy pepper, and crunchy fennel. It has soft mozzarella cheese and peppery arugula leaves. You eat it with toasted bread. It's yummy and easy to make!

Ingredients

2 medium Zucchinis
1 Yellow Bell Pepper
1 small Fennel Bulb
1 Garlic Clove
250 g Fresh Mozzarella
20 g Arugula Leaves
4 slices Whole Grain Bread
2 Tbsp Olive Oil
1/2 tsp Flaky Sea Salt
1 Lemon, juiced

Method

Slice the zucchinis into thin rounds and place them in a large bowl.

Chop the yellow bell pepper into small pieces and add to the bowl with the zucchini.

Thinly slice the fennel bulb and add it to the zucchini and bell pepper.

Mince the garlic clove and add it to the vegetables.

In a separate bowl, tear the fresh mozzarella into small pieces to create a creamy texture similar to stracciatella.

Add the arugula leaves to the bowl with the vegetables.

In a small bowl, whisk together the olive oil, lemon juice, and flaky sea salt to create a dressing.

Pour the dressing over the vegetables and arugula, and gently toss to combine.

Toast the whole grain bread until it's crispy and golden brown.

To serve, spread the torn mozzarella on a serving plate, then top with the zucchini salad mixture.

Garnish with extra arugula leaves if desired and serve with the toasted bread on the side.
