Mixed Greens, Shrimp & Mango Salad with Citrus Dressing recipe

This is a yummy salad with shrimp, mango, and mixed greens. It has a sweet and tangy dressing made with orange juice. You put it all on a plate and eat it!

Ingredients

1 ripe mango
10 oz mixed greens
1 lb raw peeled shrimp
1/4 tsp black pepper
1/4 cup extra virgin olive oil
1 tbsp honey
1/4 tsp salt
1 tbsp virgin coconut oil
1 orange
1/2 red onion

Method

Peel and slice the mango into thin strips.

Peel and thinly slice the red onion.

Wash and dry the mixed greens.

If using frozen shrimp, defrost by placing them in a bowl of water. If using fresh shrimp, proceed to the next step.

Heat a skillet over medium-high heat with 1 tbsp of coconut oil.

Drain the shrimp and pat dry with paper towels.

Cook the shrimp in the skillet until they turn pink and opaque, about 1-2 minutes per side.

For the dressing, squeeze the juice of one orange into a bowl. Whisk in the olive oil, honey, salt, and black pepper until well combined.

In a large bowl, toss the mixed greens, mango, and red onion with the dressing.

Divide the salad onto plates, top with the cooked shrimp, and serve immediately.
