Mediterranean Tuna and Potato Salad recipe


This is a yummy salad with tuna, potatoes, eggs, and green beans. It has a tangy dressing made with lemon and herbs. You put all the ingredients on a plate and pour the dressing on top. It's a healthy meal that tastes really good!


3 medium red potatoes, cubed
4 large eggs
1/2 lb green beans, trimmed
2 x (6 oz) cans chunk light tuna in water, drained and flaked
1 cup cherry tomatoes, halved
1 cup black olives, pitted
1 head butter lettuce, chopped
1/4 cup extra virgin olive oil
2 tbsp fresh lemon juice
1 tbsp chopped fresh basil
1 tbsp chopped fresh parsley
1 tbsp capers, drained
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper


Place cubed potatoes in a medium pot, cover with water, and bring to a boil. Cook until tender, about 10 minutes. Drain and let cool.
In another pot, boil eggs for 9 minutes for a firm yolk. Place in cold water to cool, then peel and quarter.
Bring a pot of water to a boil and cook green beans until bright green and tender-crisp, about 3 minutes. Drain and rinse with cold water.
In a bowl, whisk together olive oil, lemon juice, Dijon mustard, basil, parsley, salt, and pepper to create the dressing. Stir in capers.
In a large bowl, combine the cooled potatoes, green beans, flaked tuna, cherry tomatoes, and black olives.
Arrange chopped butter lettuce on plates. Top with the potato and tuna mixture.
Drizzle the dressing over the salad and top with quartered eggs. Serve immediately.
