This is a yummy burger made with chickpeas and topped with feta cheese and sun-dried tomato pesto. It sits on a bun and comes with a fresh spinach salad. It's a tasty meal for lunch or dinner.

Ingredients

4 chickpea burger patties, plant-based
4 whole grain buns
60 ml sun-dried tomato pesto
4 slices of feta cheese
1 (5 oz) pkg baby spinach
30 ml balsamic vinaigrette
30 g roasted red peppers, chopped
30 g kalamata olives, pitted and sliced
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Method

Preheat a skillet over medium-high heat.

Add olive oil to the skillet and swirl to coat the bottom.

Season the chickpea patties with salt and pepper, then add them to the skillet.

Cook the patties for 5 minutes on each side or until they are golden brown and heated through.

While the patties cook, wash and dry the baby spinach.

In a bowl, toss the spinach with balsamic vinaigrette, roasted red peppers, and kalamata olives.

Slice the feta cheese into 4 even pieces.

Toast the whole grain buns if desired.

To assemble the burgers, place the bottom half of each bun on a plate.

Top each with a chickpea patty, a slice of feta cheese, and a generous spoonful of sun-dried tomato pesto.

Finish with the top half of each bun.

Serve each burger with a portion of the spinach salad on the side.
