Mediterranean Bean and Crouton Salad recipe


This is a yummy salad with beans, crunchy bread, and fresh veggies. It has cucumbers, tomatoes, and peppers. We make a tasty dressing and mix it all together. It's good for lunch or dinner.


1 1/2 English cucumbers
1 small pkg fresh mint
2 x (15 oz) cans white beans
3 cloves garlic
1 large red onion
5 ripe tomatoes
3 multigrain baguettes
2 red bell peppers
1/4 tsp black pepper
1 tbsp honey
1/4 cup extra virgin olive oil
3 tbsp balsamic vinegar
1/2 tsp salt
1/4 cup feta cheese, crumbled


Cut the baguettes into cubes.
Heat a skillet over medium heat and coat the bottom with 2 tbsp of olive oil. Add bread cubes, season with 1/4 tsp salt and 1/4 tsp black pepper, and toss to coat. Cook until golden brown, about 5-7 minutes, then set aside.
Peel and mince 3 cloves of garlic. In a large bowl, prepare the dressing by whisking together minced garlic, 2 tbsp olive oil, balsamic vinegar, honey, and remaining salt.
Drain and rinse white beans; pat dry with paper towels. Add to the bowl with dressing and toss to coat.
Wash and dry cucumbers, tomatoes, red bell peppers, and mint. Medium dice the cucumbers, tomatoes, and peppers. Pick the mint leaves off the stems and chop them. Peel and thinly slice the red onion. Add all to the bowl with beans.
Add the toasted bread cubes to the salad and toss everything to combine.
Sprinkle crumbled feta cheese over the salad before serving.
