Mediterranean Bean and Avocado Salad with Lemon Dressing recipe


This is a yummy salad with beans, eggs, and avocado. It has a tangy lemon dressing. You chop up lettuce, tomatoes, cucumber, and onion. Then you mix it with beans and eggs. Put avocado on top and pour the dressing over it.


1 large avocado
3 hard-boiled eggs
1 English cucumber
2 (15 oz) cans cannellini beans
1 pint cherry tomatoes
1 large red onion
1 head butter lettuce
2 tablespoons lemon juice
1/4 teaspoon black pepper
1 teaspoon honey
3 tablespoons extra virgin olive oil
1/2 teaspoon salt
1 tablespoon chopped fresh parsley


Place 3 eggs in a saucepan and cover with water by about 1 inch. Bring to a boil, then cover and turn off the heat. Let sit for 9 minutes. Then, place eggs in cold water.
Wash and dry the lettuce, cherry tomatoes, cucumber, and red onion.
Chop the lettuce into bite-sized pieces and add to a large salad bowl.
Cut the cucumber into 1/2-inch cubes and add to the bowl.
Cut the cherry tomatoes in half and add to the bowl.
Peel and chop the red onion into 1/2-inch pieces and add to the bowl.
Drain and rinse the cannellini beans and add to the salad bowl.
Cut the avocado in half, remove the pit, and dice into cubes. Add to the salad bowl.
Peel and chop the hard-boiled eggs and add to the salad bowl.
In a small bowl, whisk together lemon juice, honey, olive oil, salt, and black pepper to create the dressing.
Pour the dressing over the salad and toss gently to combine.
Garnish with chopped fresh parsley before serving.
