This is a yummy mix of sweet mango, creamy avocado, and tangy lime. It has red onion, tomatoes, and green pepper too. You can eat it with chips or on top of food!

Ingredients

1/2 medium Red Onion
1 cup Cherry Tomatoes
1 medium Yellow Pepper
1 large Mango (ripe)
1 medium Avocado (ripe)
1 Lime
1/4 cup Coriander (optional for garnish)
1/2 teaspoon Salt
1/4 teaspoon Black Pepper

Method

Peel and finely dice the red onion.

Cut the cherry tomatoes into quarters.

Dice the yellow pepper into small pieces.

Slice the mango on either side of the stone, scoop out the flesh, and chop into small pieces.

Just before serving, cut the avocado in half, remove the pit, and dice the flesh.

In a bowl, combine the onion, tomatoes, yellow pepper, mango, and avocado.

Squeeze the juice of the lime over the salsa, and season with salt and black pepper.

If desired, tear the coriander leaves and sprinkle them on top as a garnish.

Serve immediately or let it sit for a few minutes to allow the flavors to meld.
