Keto Buffalo Wings Recipe

Keto Buffalo Wings recipe
Kicking Carbs

Wings remind me of happy times in my early 20s, so it is no surprise that I have a soft spot for these Keto Buffalo Wings. Itis one of those recipes that everyone - even those not watching their carbs - loves!

Ingredients

2 pounds chicken wings (or chicken drumettes)
2 tablespoons baking powder
1 teaspoon smoked paprika
Salt and pepper to taste
1/3 cup avocado oil
1/2 cup Frank’s Red Hot
1/4 cup unsalted butter
2 tablespoons apple cider vinegar
1 teaspoon minced garlic
For serving: Keto Blue Cheese Dressing or Ranch Dressing

Method

1
In a bowl stir together baking powder, smoked paprika, salt, and pepper. Toss with wings.
2
Heat about 3 inches of avocado oil in a Dutch oven.
3
Toss the wings with the baking powder, and fry in batches until golden brown, about 15 minutes. Remove with a slotted spoon and drain on paper towels.
4
Preheat an oven to 425 degrees.
5
Line a baking sheet with parchment paper and brush with avocado oil.
6
Roast for about 45 minutes, until crisp.
7
Preheat the broiler to high.
8
Add 1 cup of water or broth to the bottom of your Instant Pot and place the trivet on top. Arrange the seasoned chicken wings on top of the trivet. (You can omit the baking powder if you like.)
9
Set the pressure to high and cook for 10 minutes. Allow the pressure to release naturally for 5 minutes and then to a quick release.
10
Arrange the wings in a single layer on a baking sheet and broil for 3 to 5 minutes, until crispy.
11
Preheat your air fryer to 400 degrees.
12
Brush or spray the wings with oil, and spray the bottom of the air fryer.
13
Add the wings in a single layer and cook for 20 to 25 minutes. (Depending on the brand of air fryer you may have to cook in batches. I can fit them all into my air fryer.)
14
Use an Instant-read thermometer to determine when the wings are done. I recommend removing them when they reach 155 degrees and letting them rest for 5 to 10 minutes, until they reach 165 degrees.
15
While the wings are cooking, whisk together avocado oil, Frank’s Red hot, butter, apple cider vinegar and minced garlic in a saucepan. Heat until the butter is melted and the sauce is warm.
16
When the wings are done cooking, toss with the buffalo sauce and serve warm with Keto Blue Cheese Dressing or Ranch Dressing.
