Kale Salad with Chicken, Apples, Sunflower Seeds & Gouda recipe

This is a yummy salad with fresh kale, juicy apples, and tasty chicken. It has crunchy sunflower seeds and creamy Gouda cheese. It's a healthy meal that's easy to make for lunch or dinner!

Ingredients

2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups chopped kale
1 large apple
1/3 cup sunflower seeds
8 ounces Gouda cheese
2 cooked chicken breasts

Method

Wash and dry the kale and apple. Juice the lemon into a large bowl.

Add olive oil, apple cider vinegar, honey, salt, and pepper to the lemon juice; whisk to combine the dressing.

Fold kale leaves in half lengthwise and slice off the stems. Chop or tear leaves into bite-sized pieces and add to the bowl with the dressing. Massage the dressing into the kale with your hands.

Cut the apple into bite-sized pieces and add to the bowl with the kale.

Cut the Gouda cheese into small cubes and set aside for serving.

Slice the cooked chicken breasts into bite-sized pieces.

Add chicken and sunflower seeds to the bowl with the kale and apples; toss to combine the salad.

To serve, divide the salad between plates and top with cubed Gouda cheese. Enjoy!
