Herb-Infused Roasted Potatoes recipe

This is a yummy dish with potatoes that are crispy on the outside and soft inside. They are cooked with herbs and olive oil. You can eat them with your favorite main dish.

Ingredients

1 kg Yukon Gold potatoes
3 Tbsp olive oil
1 head of garlic
1 Tbsp chopped fresh rosemary
1 Tbsp chopped fresh thyme
1 tsp sea salt
1/2 tsp ground black pepper

Method

Preheat your oven to 200°C (392°F).

Wash and quarter the Yukon Gold potatoes.

Bring a pot of salted water to a boil and parboil the potatoes for 7 minutes.

While the potatoes are boiling, pour olive oil into a roasting tray and place in the oven to heat.

Drain the potatoes and return them to the pot. Cover with a lid and shake the pot to roughen the edges of the potatoes.

Carefully remove the hot roasting tray from the oven. Place the potatoes in the tray.

Separate the cloves of garlic but leave the skin on. Scatter them around the potatoes in the tray.

Sprinkle the chopped rosemary, thyme, sea salt, and black pepper over the potatoes.

Roast in the oven for 75 minutes, turning the potatoes every 25 minutes to ensure they brown evenly.

Once the potatoes are golden and crispy, remove from the oven and serve immediately.
