Herb-Crusted Chicken with Buttery Mashed Potatoes & Green Beans recipe


This is a yummy dinner with chicken covered in herbs and cheese. It comes with creamy mashed potatoes and tasty green beans. You cook the chicken in the oven and boil the potatoes and beans.


4 boneless skinless chicken breasts
1/4 cup grated Parmesan cheese
1/4 cup Italian breadcrumbs
1 tablespoon dried Italian herbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons mayonnaise
1 tablespoon olive oil
1 lb green beans, trimmed
1 lb russet potatoes, peeled and cubed
2 tablespoons unsalted butter
1/4 cup milk
Salt and pepper to taste


Preheat oven to 425°F (220°C). Line a baking sheet with foil and lightly oil it.
In a bowl, mix Parmesan cheese, Italian breadcrumbs, dried Italian herbs, garlic powder, onion powder, paprika, salt, and pepper.
Pat chicken dry and spread mayonnaise on both sides of each breast.
Dredge chicken in the breadcrumb mixture, pressing to adhere. Place on the prepared baking sheet.
Bake chicken for 20 minutes, or until cooked through and golden.
While chicken bakes, boil cubed potatoes in salted water until tender, about 15 minutes.
In another pot, boil green beans for 5 minutes, then drain.
Drain potatoes and return to the pot. Add butter, milk, and mash until smooth. Season with salt and pepper.
Serve each plate with a piece of chicken, a scoop of mashed potatoes, and a portion of green beans.
