Hearty Chickpea and Spinach Stew with Garlic Bread recipe

This is a warm, filling stew made with chickpeas and spinach. It's cooked with spices and served with yummy garlic bread. You can make it in a pot. It's good for cold days and makes your tummy happy.

Ingredients

1 cup dried chickpeas
32 fl oz vegetable broth
4 cups fresh spinach
1 large sweet potato
1 large carrot
1 medium yellow onion
3 cloves garlic
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp ground cinnamon
1/4 tsp cayenne pepper
Salt to taste
2 tbsp olive oil
4 slices of crusty bread
1 tbsp butter
1 additional clove garlic, minced

Method

Soak chickpeas in water overnight, then drain and rinse.

Heat a large pot over medium heat with 2 tbsp olive oil.

Peel and dice the onion and carrot. Peel and mince 3 cloves of garlic.

Add onion, carrot, and minced garlic to the pot, cooking until softened, about 5 minutes.

Peel and dice the sweet potato into bite-sized pieces.

Add cumin, smoked paprika, cinnamon, cayenne pepper, and salt to the pot. Stir for 1 minute.

Add sweet potato, chickpeas, and vegetable broth to the pot. Bring to a simmer.

Cook until sweet potatoes and chickpeas are tender, about 20 minutes.

Stir in fresh spinach and cook until wilted, about 2 minutes.

For the garlic bread, spread butter on slices of bread and sprinkle with minced garlic.

Toast the garlic bread until golden brown.

Serve the stew hot with garlic bread on the side.
