Grilled Pork Chop & Black Bean Salad with Lime Dressing recipe


This is a yummy dish with grilled pork chops and a fresh bean salad. The salad has beans, veggies, and a tangy lime dressing. It's a good meal for dinner and has lots of colors and flavors.


4 boneless pork chops
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 (15 oz) can black beans
1 red bell pepper
1/2 red onion
2 ripe tomatoes
1 ripe avocado
1/4 cup fresh cilantro leaves
1 tablespoon honey
Juice of 2 limes
1/4 teaspoon cumin
1/4 teaspoon chili powder


Wash and dry all fresh produce.
Drain and rinse the black beans; set aside to drain further.
In a small bowl, whisk together lime juice, 1 tablespoon olive oil, honey, cumin, chili powder, and a pinch of salt to create the dressing.
Preheat the grill to medium-high heat.
Mix smoked paprika, garlic powder, salt, and black pepper in a small bowl. Rub the spice mixture onto both sides of the pork chops.
Brush the grill with the remaining 1 tablespoon of olive oil. Grill the pork chops for about 5-7 minutes on each side, or until they have nice grill marks and are cooked through.
Meanwhile, dice the red bell pepper and red onion, and chop the tomatoes and avocado into small pieces.
Chop the cilantro leaves finely.
In a large bowl, combine the black beans, diced red bell pepper, red onion, tomatoes, avocado, and cilantro. Pour the dressing over the salad and toss gently to mix.
Let the pork chops rest for a few minutes after grilling, then serve with the black bean salad on the side.
