Grilled Chicken Salad with Blue Cheese, Strawberries & Walnuts recipe


This is a yummy salad with grilled chicken, blue cheese, and strawberries. It has nuts and a sweet dressing. You grill the chicken and mix it with the other things to make the salad.


1 lb chicken breasts, boneless skinless
60 ml balsamic vinaigrette
2 oz blue cheese, crumbled
1/3 cup walnut pieces
1 cup strawberries, sliced
2 x (5 oz) pkgs baby spinach
1/4 tsp black pepper
1 tbsp extra virgin olive oil
1/4 tsp salt


Preheat a grill pan or outdoor grill over medium-high heat.
Pat the chicken dry with paper towels and place on a cutting board. Cut the chicken in half horizontally to form thin cutlets. Season both sides with salt and pepper.
Coat the grill pan with olive oil. Grill the chicken, turning once, until cooked through, about 3-4 minutes per side.
In a large bowl, place the baby spinach. Wash and slice the strawberries, then add them to the spinach.
On a clean cutting board, roughly chop the walnut pieces and add them to the salad bowl.
Once the chicken is cooked, transfer it to a cutting board and cut into strips. Add the chicken to the salad.
Drizzle the balsamic vinaigrette over the salad and toss to combine.
Divide the salad between plates or bowls, sprinkle with crumbled blue cheese, and serve.
