This is a yummy salad with grilled chicken, sweet nectarines, and creamy goat cheese. The leaves are green and the dressing is tangy. It's a good meal for lunch or dinner and not too hard to make.

Ingredients

142 g baby arugula
680 g chicken breasts, boneless skinless
100 g goat cheese, crumbled
3 nectarines
30 ml balsamic vinegar
5 ml honey
2 cloves garlic
Black pepper
5 ml Worcestershire sauce
45 ml extra virgin olive oil

Method

Rinse and dry the arugula, then place it in a large salad bowl.

Cut the nectarines into wedges, removing the pit, and add them to the bowl with arugula.

Peel and mince the garlic cloves, then place them in a small bowl.

Heat a grill pan over medium heat.

Season the chicken breasts with salt and pepper.

Grill the chicken until it's cooked through and has grill marks, about 5-7 minutes per side. Transfer to a plate and let it rest.

In the bowl with garlic, add balsamic vinegar, honey, Worcestershire sauce, olive oil, salt, and pepper. Whisk to create the dressing.

Crumble the goat cheese into the salad bowl.

Slice the rested chicken into strips and add to the salad.

Drizzle the dressing over the salad and gently toss everything together.
