Egg, Spinach & Feta Breakfast Burrito recipe

This is a yummy breakfast burrito with eggs, spinach, and feta cheese. You cook spinach and eggs in a pan, then put them in a tortilla with cheese. Roll it up and it's ready to eat!

Ingredients

2.5 oz baby spinach
6 large eggs
4 (8-inch) whole wheat tortillas
2 oz feta cheese, crumbled
1/4 tsp black pepper
1 tbsp olive oil
1/4 tsp garlic powder
1/4 tsp salt

Method

Wash and dry the spinach if it's not pre-washed.

Crack the eggs into a bowl, add salt, black pepper, and garlic powder, and whisk together.

Heat olive oil in a skillet over medium heat.

Add the spinach to the skillet and cook, stirring constantly, until wilted, about 1-2 minutes.

Pour the egg mixture over the spinach. Scramble the eggs with the spinach by stirring and flipping, making sure to mix well. Cook until the eggs are set and no longer runny.

Remove the skillet from the heat and let it cool slightly.

Sprinkle the crumbled feta cheese over the eggs and stir to combine.

Warm the whole wheat tortillas in the microwave for about 20 seconds to make them more pliable.

Divide the egg and spinach mixture evenly among the tortillas, placing it on one side of each tortilla.

Roll up the tortillas tightly, starting from the side with the filling, to form the burritos.

Serve immediately or wrap in foil to enjoy on the go.
