For lovers of sweets but who do not want to gain weight. The whites provide very few calories and the apple as it is baked gives the pleasure of a sweet.
Ingredients
10 uni Eggs
2 Tbsp Coconut Sugar
3 uni Royal Gala Apple
to taste Ground Cinnamon
1/2 uni Lemon
to taste Olive Oil
Method

Separate the egg yolks and beat the egg whites. Add the xylitol little by little and beat well until you get a firm meringue.

Grease a tray with a little oil (or butter), line with parchment paper and put the meringue there.

Bake in an oven heated to 200ºC for about 10 min. Allow to cool inside the oven.

Unmold after being warm (almost cold) and place it on a cloth.

Peel the apples and cut them into small pieces.

Cook them in a pan with a little water (cover only the bottom) and add a few drops of lemon juice and cinnamon to taste.

Cook over medium heat for 10 to 15 min.

With a magic wand, grind the apples, leaving whole pieces.

Arrange the apple puree on top of the pie and roll it up with the help of a cloth.

Sprinkle with cinnamon to taste and serve when cool.
