Creamy Garlic Pasta with Zucchini and Mushrooms recipe


This pasta dish is full of creamy sauce, cheese, and veggies. It has zucchini and mushrooms. You cook it all in one pot. It's cheesy and yummy. You can make it for dinner and share with your family.


1 tablespoon olive oil
3 cloves garlic, minced
1 small bunch green onions, sliced
1 teaspoon dried basil
2 medium zucchini, diced
6 oz cremini mushrooms, diced
12 oz fettuccine pasta
2 cups vegetable broth
1 cup whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley


Heat olive oil in a large pot over medium heat. Add minced garlic and green onions, cooking until fragrant, about 2 minutes.
Stir in the dried basil, diced zucchini, and diced cremini mushrooms. Cook for 5 minutes, until vegetables start to soften.
Break the fettuccine pasta in half and add it to the pot along with the vegetable broth.
Pour in the whole milk and season with salt and pepper. Stir to combine.
Bring the mixture to a boil, then reduce heat to maintain a simmer. Cook, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed, about 18 minutes.
Remove the pot from heat and stir in the grated Parmesan cheese until melted and the sauce is creamy.
Garnish with chopped fresh parsley before serving. Enjoy your creamy garlic pasta hot!
