Creamy Garlic and Herb Tortellini recipe

This is a yummy pasta dish with cheese tortellini, mushrooms, and a creamy sauce. It has garlic, herbs, and cheese. You boil pasta and cook mushrooms, then mix them with a tasty sauce.

Ingredients

300 g Cheese Tortellini
200 g Button Mushrooms
2 Garlic Cloves
1 tbsp Fresh Basil, chopped
60 ml Dry White Wine
30 g Grated Parmesan Cheese
1 tbsp Lemon Zest
2 tbsp Olive Oil
Salt to taste
Freshly Ground Black Pepper to taste
30 g Pine Nuts

Method

Start by slicing the mushrooms and finely chopping the garlic.

In a large pot, bring water to a boil and cook the cheese tortellini according to the package instructions, usually about 2 minutes. Drain and set aside.

While the tortellini is cooking, heat the olive oil in a large frying pan over medium heat. Add the mushrooms and a pinch of salt, cooking for about 5 minutes until they are golden brown.

Add the chopped garlic and basil to the mushrooms and cook for another minute.

Pour in the white wine and let it simmer for 2 minutes to reduce slightly.

Add the cooked tortellini to the pan with the mushrooms. Toss everything together and cook for another 2 minutes so the flavors combine.

Remove from heat and stir in the grated Parmesan cheese and lemon zest. Season with salt and freshly ground black pepper to taste.

Toast the pine nuts in a dry pan until golden and sprinkle over the pasta before serving.
