This is a yummy salad with shrimp, oranges, and greens. It has a sweet and tangy dressing. You put it all on a plate and eat it. It's good for lunch or dinner.

Ingredients

1.5 lb raw peeled shrimp, fresh or frozen
2 oranges
2 heads of romaine lettuce
1 red onion
2 tablespoons olive oil
1 tablespoon honey
1 tablespoon white wine vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup sliced almonds

Method

If using frozen shrimp, thaw in a bowl of water. If fresh, proceed to next step.

Wash and chop the romaine lettuce into bite-sized pieces.

Peel and segment the oranges, removing any seeds.

Thinly slice the red onion.

In a small bowl, whisk together the juice of half an orange, honey, white wine vinegar, salt, and pepper to make the dressing.

Heat olive oil in a skillet over medium-high heat.

Cook shrimp until they turn pink and opaque, about 2-3 minutes per side.

In a large bowl, toss the lettuce, orange segments, and red onion with the dressing.

Top the salad with cooked shrimp and sprinkle with sliced almonds before serving.
