This is a yummy breakfast food made with oats, nuts, and seeds. It's crunchy and sweet. You bake it until it's golden. Eat it with yogurt or milk. It smells like cinnamon and tastes like a treat!

Ingredients

320 g Rolled Oats
120 g Pecans, chopped
80 g Mixed Seeds (Chia, Flaxseed)
40 g Dried Cranberries
1 tsp Ground Cardamom
5 Tbsp Honey
1 tsp Vanilla Extract
5 Tbsp Coconut Oil, melted

Method

Preheat the oven to 175°C/350°F.

In a large mixing bowl, combine the rolled oats, chopped pecans, and mixed seeds.

In a small bowl, whisk together the melted coconut oil, honey, vanilla extract, and ground cardamom.

Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.

Spread the granola mixture onto a baking sheet lined with parchment paper.

Bake in the preheated oven for 40 minutes, stirring every 10 minutes to ensure even browning.

During the last 5 minutes of baking, sprinkle the dried cranberries over the granola and return to the oven.

Remove from the oven and let the granola cool completely. It will become crunchier as it cools.

Store the cooled granola in an airtight container at room temperature.
