This is a yummy pizza with a twist. It has chickpeas, mango, and cheese on top of pita bread. It's cooked in the oven until the cheese melts. Then, fresh basil is added on top. It's a fun meal for lunch or dinner.

Ingredients

1 x (15 oz) can chickpeas
1 large ripe mango
2 cups shredded cheddar cheese
1 medium purple onion
4 whole wheat pitas
1 x (8 oz) can tomato paste
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 small bunch fresh basil

Method

Preheat the oven to 425°F (220°C).

Drain and rinse the chickpeas in a colander; set aside to drain further.

Peel and dice the mango into bite-sized pieces.

Peel and slice the purple onion into thin strips.

In a small bowl, mix together the tomato paste, cumin, garlic powder, and cayenne pepper.

Spread a thin layer of the spiced tomato paste onto each pita.

Sprinkle shredded cheddar cheese over the tomato paste.

Top with purple onion, diced mango, and chickpeas.

Place the pitas on a baking sheet and bake in the oven for 10 minutes, or until the cheese is melted and bubbly.

While the pizzas are baking, wash and dry the basil. Tear the leaves into smaller pieces, discarding the stems.

Remove the pitas from the oven and immediately top with fresh basil leaves.

Serve the pita pizzas hot and enjoy!
