Chicken, Pear & Feta Flatbread with Spinach Salad recipe


This is a yummy flatbread pizza with chicken, sweet pear, and tangy feta cheese. It comes with a fresh spinach salad. You cook the chicken, put everything on flatbread, and bake it. Then mix the salad and eat!


4 cups baby spinach
1 large ripe pear
1 small package fresh dill
1 x 6 oz package feta cheese
1 tablespoon balsamic vinegar
2 tablespoons olive oil
2 boneless chicken breasts
4 pieces of naan or flatbread
1/4 teaspoon ground black pepper
1 tablespoon honey mustard
1 tablespoon honey
1/4 teaspoon salt


Preheat your oven to 450°F (230°C).
Heat a pan over medium-high heat. Add 1 tablespoon of olive oil and cook the chicken breasts until browned and cooked through, about 6-8 minutes per side. Let them cool, then cut into thin slices.
Place the naan or flatbread on a baking sheet and lightly toast in the oven for about 3 minutes, then remove.
Wash and dry the spinach and dill. Chop the dill and set aside.
Cut the pear into thin slices.
Top each flatbread with sliced chicken, pear slices, and crumbled feta cheese.
Bake the flatbreads in the oven until the cheese is slightly melted and the edges are golden, about 7 minutes.
While the flatbreads are baking, make the salad dressing by whisking together balsamic vinegar, honey mustard, honey, the remaining olive oil, salt, and pepper in a large bowl.
Add the spinach to the dressing and toss to coat. Sprinkle with chopped dill.
Remove the flatbreads from the oven, cut into slices, and serve with the spinach salad on the side.
