Better than takeout healthy chicken chow mein noodles that are ready in less than 20 minutes! Easy to make, packed with veggies, family favorite.
Ingredients
6 oz. chow mein noodles
1/2 lb. boneless skinless chicken breast, chopped
2 tsp cornstarch
1 tbsp sesame oil
2 cups shredded cabbage
1 carrot, sliced thin
1/2 cup red pepper, chopped
1/2 cup broccoli florets
1/2 cup cauliflower florets
1/2 cup snow peas
1 garlic cloves, minced
2 tsp ginger, minced
3 tbsp oyster sauce
2 tbsp reduced sodium soy sauce
1/4 tsp white pepper (or black pepper)
1/4 cup green onions

Prepare the chow mein noodles according to package directions. Toss the chicken breast with cornstarch.

Mix together the oyster sauce, soy sauce, and white pepper to make the chow mein sauce. For a sweeter sauce, add a touch of honey or sugar.

Heat half the sesame oil in a skillet or wok over medium high heat. Add the chicken in a single layer and cook for 4-5 minutes until browned and cooked through. Remove and set aside the chicken.

Add the remaining sesame oil. Add the carrots, red pepper, broccoli, cauliflower, and snow peas. Cook for 4-5 minutes until tender crisp. Add the garlic and ginger. Cook for 1 minute until fragrant.

Add the noodles, chicken, and sauce to the pan. Stir together and season if needed.
