Chicken and Cabbage Stir Fry recipe

In just 15 minutes this delicious chicken and cabbage stir fry is ready. With a delicious sweet, savory, and slightly spicy stir fry sauce, it's a dinner you will make again and again.

Ingredients

3 tbsp low sodium soy sauce
1 tbsp sesame oil
2 tsp Sriracha
2 tsp honey (leave out for low carb)
2 tsp coconut oil (or other neutral oil)
1 lb. boneless skinless chicken breast, sliced thin
Salt and pepper
4 cups shredded coleslaw mix (cabbage and carrots)
4 green onions, sliced
2 garlic cloves, minced
1 tbsp fresh ginger, minced

Method

Mix together the soy sauce, sesame oil, Sriracha, and honey to make the stir fry sauce.

Heat the coconut oil in a skillet over medium-high heat. Season the chicken lightly with salt and pepper. Remember the sauce stir fry sauce has soy sauce, so you don’t want to oversalt.

Add to the skillet and cook for 2-3 minutes until beginning to brown. Stir and cook for another 2-3 minutes until just cooked through. Set aside. Cooking time will vary slightly based on size of the chicken pieces.

Add the cabbage, green onions, garlic, and ginger to the pan. Cook for 5-7 minutes or until the cabbage is tender. I like to cook it until it is tender crisp.

Add the chicken and stir fry sauce to the pan. Stir together. Let cook for 1-2 minutes to thicken. Taste and season as needed.

Top with sesame seeds and extra green onions or cilantro if desired.
