This is a warm, cheesy dish with slices of zucchini and a golden crust on top. It's like a hug in a dish! We mix zucchini with cheese and bake it until it's all bubbly.

Ingredients

8 medium zucchini, sliced
1/2 cup unsalted butter, melted
1 cup shredded mozzarella cheese
1 cup Greek yogurt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 cup fresh basil, chopped
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese

Preheat the oven to 350°F (175°C).

Wash the zucchini and slice them into 1/4 inch thick rounds.

Boil the zucchini slices for 5 minutes, then drain well.

In a mixing bowl, combine the melted butter, mozzarella cheese, Greek yogurt, garlic powder, black pepper, and chopped basil.

Add the drained zucchini to the cheese mixture and stir to coat.

Transfer the zucchini mixture to a buttered 9x13 inch casserole dish, spreading it out evenly.

In a small bowl, mix together the panko breadcrumbs and grated Parmesan cheese.

Sprinkle the breadcrumb mixture over the zucchini in the casserole dish.

Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is bubbly.
