Cheesy Turkey Meatballs with Spinach and Mushroom recipe

This is a yummy dinner with meatballs made from turkey. They are covered in cheese and cooked in a tomato sauce. We also cook mushrooms and spinach to eat with the meatballs. It's a warm and cheesy meal!

Ingredients

2 tablespoons olive oil
1 pound ground turkey
2 large eggs
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped fresh parsley
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
2 cups baby spinach, roughly chopped
8 ounces cremini mushrooms, sliced
1 cup shredded mozzarella cheese
1 can (15 ounces) tomato sauce

Method

Preheat your oven to 400°F (200°C).

In a large bowl, combine the ground turkey, eggs, breadcrumbs, Parmesan cheese, parsley, half of the minced garlic, salt, pepper, and oregano. Mix until well combined.

Form the mixture into 1 1/2-inch meatballs and place them on a baking sheet.

Bake the meatballs for 10 minutes, then remove from the oven.

While the meatballs are baking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms and cook for 5 minutes until they start to brown.

Add the chopped spinach to the skillet with the mushrooms and cook until the spinach wilts, about 2 minutes. Remove from heat and set aside.

In a separate saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the remaining minced garlic and cook for 1 minute.

Pour the tomato sauce into the saucepan and bring to a simmer.

Place the partially cooked meatballs into the simmering tomato sauce. Cover and let simmer for 10 minutes.

Sprinkle the shredded mozzarella cheese over the meatballs and sauce. Cover the pan again and cook for another 5 minutes, or until the cheese is melted and bubbly.

Serve the meatballs with the sauce and the spinach-mushroom sauté on the side.
