Cheesy Tuna and Vegetable Fusilli recipe


This dish is a cheesy pasta with tuna and veggies. You cook pasta and mix it with melted cheese and tuna. Then, you cook broccoli and zucchini until they are just right. Mix it all together for a yummy meal!


300 g fusilli pasta
2 crowns broccoli, cut into florets
2 medium zucchini, sliced into half-moons
200 g sharp cheddar cheese, grated
2 x (170 g) cans chunk light tuna in water, drained
200 g cream cheese, cubed
240 ml whole milk
1/2 tsp black pepper
1/2 tsp crushed red pepper
2 tbsp extra virgin olive oil
1/2 tsp paprika
1 tsp salt


Fill a large pot with water, add 1/2 tsp salt, and bring to a boil. Add fusilli pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add broccoli and zucchini, season with 1/4 tsp salt and 1/4 tsp black pepper, and sauté until tender-crisp, about 6-7 minutes. Remove from heat and cover to keep warm.
In the same pot used for pasta, combine cubed cream cheese, grated cheddar cheese, whole milk, 1/4 tsp paprika, and a pinch of salt. Cook over medium heat, whisking until the cheeses are melted and the sauce is smooth, about 5 minutes.
Add the drained tuna to the cheese sauce, breaking it apart with a fork. Stir in the cooked fusilli until everything is well combined and heated through, about 3 minutes.
Fold the sautéed vegetables into the pasta and cheese mixture, and stir gently to combine.
Serve the pasta hot, sprinkled with crushed red pepper for a little kick.
