Cajun Chicken Penne with Bell Peppers and Tomato recipe

This is a yummy pasta dish with chicken and veggies. It has a Cajun kick and is covered in melted cheese. You cook everything in one pot. It's a warm, filling meal for dinner.

Ingredients

1 tablespoon extra virgin olive oil
1 large red bell pepper, diced
2 sticks celery, diced
1 large yellow onion, diced
2 cloves garlic, minced
1 lb ground turkey
1 tablespoon Cajun seasoning
1/2 teaspoon salt
12 oz penne pasta
2 1/2 cups chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh basil leaves

Method

Wash and dry all fresh produce. Prepare the vegetables by dicing the red bell pepper and celery, and dicing the onion. Mince the garlic cloves.

Heat a large pot over medium-high heat. Add the olive oil, swirling to coat the bottom.

Add the diced vegetables and minced garlic to the pot. Cook for 3-4 minutes until softened.

Add the ground turkey, Cajun seasoning, and salt to the pot with the vegetables. Cook, breaking the meat apart with a spoon, until the turkey is browned and crumbly, about 5-6 minutes.

Stir in the penne pasta, chicken broth, and undrained diced tomatoes. Bring the mixture to a boil.

Once boiling, reduce the heat to medium-low. Cover and simmer until the pasta is tender and most of the liquid is absorbed, about 10-12 minutes.

While the pasta cooks, chop the fresh basil leaves and set aside.

Remove the pot from heat. Stir in the chopped basil and shredded cheddar cheese until well combined.

Serve the Cajun chicken penne hot, garnished with extra cheese or basil if desired. Enjoy!
