Broken Wonton Soup recipe

A thirty minute soup that doesn't miss a thing.

Ingredients

1 teaspoon extra virgin olive oil
2 cloves garlic, thinly sliced
1-inch piece ginger, peeled and sliced into thin matchsticks
1/4 cup green onions, thinly sliced and divided
2 tablespoons cilantro leaves, finely chopped and stems reserved
4 cups chicken broth
2 tablespoons soy sauce
12 oz bulk pork sausage
3 small baby bok choy, roughly chopped
12 wonton wrappers, quartered diagonally

Method

Heat oil in a saucepan over medium-high heat. Add garlic and ginger and cook just until fragrant, 30 seconds. Stir in broth, 2 cups of water, 1 tablespoon of the soy sauce, and cilantro stems. Bring to a boil, reduce heat to low and partially cover and let simmer 20 minutes.

Meanwhile, finely chop cilantro leaves and 2 tablespoons of the green onions. Add to a bowl, and combine with sausage, and remaining soy sauce and mix together. Roll mixture into 1-inch meatballs.

Remove cilantro stems from broth. Return broth to a simmer, stir in bok choy, then remove from heat.

Carefully add meatballs, cover, and let stand until meatballs are cooked through, 5-6 minutes.

Drop wonton wrappers into soup, one at a time, stirring gently each time to keep from sticking. Add remaining green onions and stir once more. Serve and enjoy!
