Broccoli Cheddar Soup recipe


This is a warm, creamy soup with broccoli, carrots, and lots of cheddar cheese. It's like a hug in a bowl! You cook veggies and cheese together to make it yummy.


1 tablespoon unsalted butter
1 medium onion, diced
1/4 cup unsalted butter, melted
3 tablespoons all-purpose flour
2 cups whole milk
2 cups vegetable stock
2 cups broccoli florets, chopped
1 cup carrots, julienned
1/2 teaspoon garlic powder
3 cups sharp Cheddar cheese, shredded
1/2 teaspoon smoked paprika
Salt and black pepper to taste


In a large pot, melt 1 tablespoon of butter over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
In the same pot, add the 1/4 cup of melted butter and sprinkle in the flour. Whisk for about 3 minutes to cook the flour without letting it burn.
Gradually pour in the milk while continuing to whisk to prevent lumps. Then, add the vegetable stock and bring the mixture to a simmer.
Add the chopped broccoli, julienned carrots, and garlic powder to the pot. Let it simmer until the vegetables are tender, about 15 minutes.
Reduce the heat to low and stir in the shredded Cheddar cheese gradually until melted and smooth. Season with smoked paprika, salt, and black pepper to taste.
Serve the soup hot, optionally garnished with more shredded cheese or a sprinkle of paprika.
