Ingredients
1 Medium Onion
1 Carrot
3-4 Spring Onions
3-4 Garlic Cloves
100g Mangetout
3 Nests of Dried Egg Noodles
300g Beansprouts
2 Slices of Sirloin Steak
½ Tsp Ground White Pepper
1 Tbsp Light Soy Sauce
1 Tbsp Sesame Oil
2 Tbsp Shaoxing Wine
1 Tbsp Cornflour
½ Tsp Ground White Pepper
1 Tbsp Light Soy Sauce
2 Tbsp Dark Soy Sauce
3 Tbsp Oyster Sauce
1 Tbsp Sesame Oil
Pinch of Salt
Method
1
Slice an onion. Peel your carrot and thinly slice. Chop your spring onions at an angle (about 3cm lengthways). Finely slice your garlic. Prep your mangetout and give it a wash.
2
Pop the noodles in a heatproof bowl and cover with boiling water until the noodles are cooked. This should take around 18 mins.
3
Cut your steak into three pieces then thinly slice across the line to shorten the fibre of the meat.
4
Blanch your beansprouts in a pot of boiling water for just a few mins.
5
Coat your wok with 3 tbsp of oil then pour most of it away. Fry the beef slices on high heat for two mins, then add your garlic, carrot, onion and mangetout.
6
Fry for a few mins then add your cooked noodles, beansprouts and fry for another 2 mins, making sure to toss the noodles well.
7
Mix your sauce in a separate bowl and then slowly add it to the noodles and mix well.
8
Add your spring onions to your noodles and plate up!
