2 tablespoons olive oil
1 pound lean ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon minced garlic
1 tablespoon grated ginger
1 large red onion, thinly sliced
4 cups shredded napa cabbage
2 medium carrots, julienned
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
1 tablespoon sriracha sauce
1 tablespoon cornstarch
1/4 cup water

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the ground beef, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook until browned, about 5-7 minutes. Transfer to a bowl.
In the same skillet, add another tablespoon of olive oil. Add the garlic, ginger, and sliced onion. Cook for 2 minutes until fragrant.
Add the shredded cabbage and julienned carrots to the skillet. Cook for 3-4 minutes until the vegetables are tender.
In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, sriracha sauce, and the remaining salt and pepper.
In another small bowl, dissolve cornstarch in water to make a slurry.
Return the beef to the skillet with the vegetables. Pour the sauce mixture and cornstarch slurry over the beef and vegetables. Stir well to combine.
Cook for another 2-3 minutes until the sauce has thickened.
Serve the beef and cabbage stir-fry hot, garnished with sesame seeds if desired.
