Baked Eggs in Spicy Tomato Sauce with Feta and Spinach recipe

This dish is a warm, cheesy egg baked in a spicy tomato sauce. It has soft spinach and tangy feta cheese. It's cooked in a pan and served hot. It's good for breakfast or any meal.

Ingredients

1 tbsp olive oil
1/2 medium red onion, diced
3 cloves garlic, minced
1 (14 oz) can diced tomatoes
1 tsp smoked paprika
1/2 tsp cumin
1/4 tsp red pepper flakes
1/2 tsp salt
4 cups fresh spinach
4 large eggs
1/2 cup crumbled feta cheese
2 tbsp chopped fresh parsley

Method

Preheat the oven to 375°F.

Wash and dry the fresh spinach and parsley.

Heat olive oil in an oven-safe skillet over medium heat.

Add diced red onion and minced garlic to the skillet. Cook until onion is soft, about 3 minutes.

Stir in the diced tomatoes, smoked paprika, cumin, red pepper flakes, and salt. Simmer for 5 minutes.

Add the spinach to the skillet and cook until just wilted, about 2 minutes.

Make four wells in the tomato-spinach mixture and crack an egg into each well.

Sprinkle crumbled feta cheese over the mixture.

Transfer the skillet to the preheated oven and bake until the egg whites are set but yolks are still runny, about 10-12 minutes.

Remove from oven and let it cool for a couple of minutes.

Garnish with chopped fresh parsley before serving.
