Baked Avocado Eggs with Crispy Prosciutto Recipe

This is a yummy breakfast where you bake eggs inside avocado halves. They're topped with crispy prosciutto and a sprinkle of cheese. You eat it with toast sticks.

Ingredients

4 ripe Avocados
8 small Eggs
8 slices Prosciutto
40 g Cheddar Cheese
1 pinch Salt
1 pinch Black Pepper
4 slices Whole Grain Bread

Method

Preheat your oven to 200°C (392°F).

Slice the avocados in half and remove the pits. Scoop out a little bit more avocado to make room for the eggs.

Place the avocado halves on a baking sheet and crack an egg into each half. Season with salt and pepper.

Bake the avocado halves in the oven for about 15 minutes or until the eggs are cooked to your liking.

While the avocados are baking, lay the prosciutto slices on a separate baking sheet.

Put the prosciutto in the oven and bake for 10 minutes or until crispy.

Toast the whole grain bread and cut into strips.

Grate the cheddar cheese.

Once the avocados are done, take them out of the oven and sprinkle grated cheddar cheese on top.

Serve the baked avocado eggs with crispy prosciutto and toast sticks on the side.
