This is a yummy fish dish wrapped in bacon with a fresh salad. The salad has avocado, cherry tomatoes, corn, and feta cheese. It's easy to make and very tasty!

Ingredients

4 tilapia fillets (6 oz each)
8 slices of bacon
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 cup cherry tomatoes, halved
1 cup frozen corn, thawed
1 ripe avocado, diced
1/2 cup feta cheese, crumbled
1 tbsp balsamic vinegar
1/2 tsp honey
1/4 cup fresh cilantro, chopped

Method

Preheat your skillet over medium-high heat.

Season the tilapia fillets with salt and pepper.

Wrap each tilapia fillet with 2 slices of bacon, securing with toothpicks if necessary.

Add olive oil to the hot skillet and place the bacon-wrapped tilapia in the pan.

Cook for 5-6 minutes on each side or until the bacon is crispy and the tilapia is cooked through.

Remove the tilapia from the skillet and let it rest on a plate.

In a large bowl, combine the halved cherry tomatoes, thawed corn, and diced avocado.

In a small bowl, whisk together balsamic vinegar and honey to create a dressing.

Pour the dressing over the salad and toss gently to coat.

Add the crumbled feta cheese and chopped cilantro to the salad and mix lightly.
