This is a yummy sandwich with cheese and veggies. It has artichoke pesto and spinach inside. You eat it with crunchy carrots and celery. There is a tasty hummus dip to go with it. It's good for lunch or a snack.

Ingredients

4 medium carrots
4 sticks celery
1 x 8 oz block cheddar cheese
1/2 cup hummus
1/4 cup artichoke pesto
1 cup fresh spinach leaves
8 slices sourdough bread
2 tablespoons olive oil

Method

Wash and dry the carrots, celery, and spinach leaves.

Peel, trim, and cut the carrots into 3-inch sticks.

Trim the celery and cut into 3-inch sticks.

Thinly slice the cheddar cheese.

Preheat a skillet over medium heat.

Spread artichoke pesto on 4 bread slices.

Add a layer of spinach leaves and cheddar cheese on top of the pesto.

Close the sandwiches with the remaining bread slices.

Brush the skillet with olive oil and place the sandwiches in the skillet.

Cook until the bread is golden brown and the cheese has melted, about 3-5 minutes per side.

Transfer the sandwiches to a cutting board, slice in half, and serve with the carrot and celery sticks and a side of hummus for dipping.
