This is a yummy breakfast food. It's like a thick, soft pancake with holes on top. You cook it in a pan. Eat it with butter, jam, or honey. It's made with whole wheat and a sweet syrup from bees.

Ingredients

100 g Active Sourdough Starter
50 g Whole Wheat Flour
25 g All-Purpose Flour
70 ml Water
1 Tbsp Honey
3 Tsp Baking Powder
1/2 Tsp Salt
1 Tbsp Unsalted Butter

Method

In a medium bowl, mix the sourdough starter, whole wheat flour, all-purpose flour, water, honey, baking powder, and salt until well combined. The batter should be thick but pourable.

Heat a non-stick frying pan over low heat and add a little unsalted butter to lightly coat the surface.

Place lightly greased egg rings or metal cookie cutters in the pan as molds.

Pour the batter into the molds until they are about half full.

Cook the crumpets for about 6-8 minutes or until bubbles form on the surface and the edges look set.

Carefully remove the rings, flip the crumpets, and cook for another 2-3 minutes until the tops are lightly golden.

Serve the crumpets warm with extra honey, butter, or your favorite jam.
