Whipped Feta with Charred Corn and Herb Oil recipe

This is a yummy dish with creamy cheese and sweet corn. We mix feta and yogurt to make it smooth. We cook corn until it's a little brown and mix it with tasty brown butter. We put herbs and oil on top for extra flavor. It's good for sharing with friends!

Ingredients

4 small flour tortillas
1/2 tsp smoked paprika
250 g feta cheese
120 g Greek yogurt
2 limes
2 ears of corn
60 g unsalted butter
2 tbsp chopped chives
1 small bunch of parsley
2 tbsp extra virgin olive oil
Salt to taste
Black pepper to taste

Method

Preheat the oven to 180°C (350°F). Cut the flour tortillas into small triangles and place them on a baking sheet.

Drizzle the tortilla triangles with 2 tablespoons of extra virgin olive oil, sprinkle with smoked paprika, salt, and toss to coat evenly.

Bake the tortilla triangles for 10-15 minutes until they are crispy and golden brown. Remove from the oven and let them cool to become crisp.

In a food processor, combine the feta cheese and Greek yogurt. Process until the mixture is creamy and smooth. Add the zest of 1 lime, a pinch of salt, and black pepper to taste. Squeeze in the juice of 1 lime and mix well.

Spread the whipped feta mixture onto a serving dish and place it in the refrigerator to chill.

Remove the corn kernels from the cobs. Heat a pan over high heat and add the corn kernels. Cook for 3-4 minutes until they start to char.

Reduce the heat to medium and add the unsalted butter to the pan. Stir the corn until the butter melts and turns a golden brown color, about 3-4 minutes.

Finely chop the parsley and chives, and stir them into the corn mixture.

Spoon the charred corn and brown butter over the chilled whipped feta.

Cut the remaining lime into wedges for serving. Garnish the dish with extra chopped chives and serve with the crispy tortilla chips.
